How to get constant 120 volt output from a variable-output hydroelectric source?

So I’m attempting to design a hydroelectric system that will obviously be producing variable power. Lets say I use an AC generator, so directly from there I have varying frequency and power output. I want the final product to be 60Hz, 120V RMS AC. What steps must I take to get there, with reasonably high efficiency and low distortion?
